<span style="font-family: Arial"><h2 style="text-align: center">Pastry Chef - Dining Services, University Housing</h2><h3 style="text-align: center">Dining Services, University Housing</h3><br><h4>Job Summary</h4>Responsible for the preparation and service of gourmet pastries and other foods for University Dining, and for training hourly and supervisory personnel in creative pastry preparation and presentation. <h4>Duties & Responsibilities</h4><ul><li>Assists in planning, coordinating, and directing a food service operation, particularly as it relates to pastries and desserts. </li><li>Assists in planning, coordinating, and directing specialty pastry programs.</li><li>Prepares recommendations for improvements in dining procedures necessary to maintain an efficient operation and good customer relations.</li><li>Researches current trends for pastries and desserts; assists in the development and standardization of recipes.</li><li>Orders and/or requisitions food and supplies in accordance with established specifications.</li><li>Practices good public relations with students, guests, and university personnel.</li><li>Provides adequate information to food service units regarding menu changes and individual dining problems.</li><li>Assists in planning and implementing a marketing strategy for dining services available, especially as it relates to specialty pastry programs.</li><li>Makes budget recommendations regarding food cost and labor cost; follows and implements the budget as established for dining operations by the unit manager.</li><li>Oversees the service standards as they relate to dining, special events, and specialty pastry programs.</li><li>Supervises staff or lower rank employees as assigned.</li><li>Performs other related duties as assigned.</li></ul><br><h4>Additional Physical Demands</h4>Physical Demands: Position works in a kitchen area which is heated by ovens and stoves. Position involves remaining stationary and may involve relocating or transporting.<br><br>Working Conditions: The work is performed in an Industrial Kitchen where there is some discomfort in low temperature areas (-10 degrees F) and/or high temperature areas (90 degrees F). There is risk involved when working with dangerous machinery, wet floors, and exposure to open flames.<h4>Minimum Qualifications</h4><p>1. High school diploma or equivalent.<br>2. Any combination totaling one (1) year (12 months) from the categories below:<br><span style="white-space: pre"> </span>A. College coursework in the culinary arts field, as measured by the following conversion table or its proportional equivalent:<br> -30 semester hours equals one (1) year (12 months)<br><span style="white-space: pre"> </span>B. Vocational training in the culinary arts field, such as an apprenticeship.<br><span style="white-space: pre"> </span>C. Skilled work experience (such as an Assistant Chef or Culinary Worker IV) in large-scale cooking in a variety of food areas <span style="white-space: pre"> </span>(meats, baking, desserts, salads, sauces, etc.) and in a variety of international cuisines (European, American, Asian, etc.) that <span style="white-space: pre"> </span>provided a knowledge of food science, food service management, food sanitation, and the culinary arts and their practice.<br>3. Two (2) years (24 months) of highly skilled work experience in the preparation and presentation of gourmet pastries and desserts.</p><p>Note: As required by the position to be filled, possession of the American National Standards Institute (ANSI) accredited Certified Food Protection Manager (CFPM) or per PA 100-0194 and/or PA 100- 0954, a valid Illinois Food Service Sanitation Manager Certification (FSSMC).</p><h4>Appointment Information</h4><p>This is a 100% full-time Civil Service 0731 - Pastry Chef position, appointed on a 12-month basis. The expected start date is as soon as possible after the job posting close date. The budgeted salary range for this position is $19.88/hr. to $27.08/hr.
